Chocolate Chip Chia Mug Pancake

Ready in 3 minutes, this mug pancake is a balanced and delicious snack that will satisfy your sweet tooth and keep you full.



I personally love snacks that take little effort to put together. But as someone who works from home, I don't necessarily want a protein bar every day.


This checks all the boxes: whole grain carbs, protein, and a whopping 8 grams of fiber! All while being a quick, minimal-dish recipe.


Ingredients

  • 1/3 cup Bob's Red Mill Protein Pancake & Waffle Mix

  • 1/3 cup water

  • 1 tbsp chia seeds

  • chocolate chips (I prefer mini chips when I can find them!


Recipe

  1. In a medium size mug, whisk together the pancake mix, water and chia seeds.

  2. Add in chocolate chips.

  3. Microwave for 60-80 seconds. That's it!


Once you've tried this recipe, you can mix and match the mix-ins for different flavors. Another one of my favorites is add blueberries in place of the chocolate chips.
