Recipe Roundup: My Favorite Ways to Simplify Breakfast

Anyone else have zero interest in cooking breakfast in the morning? I personally don't want to spend more than a couple minutes putting together breakfast most days!

I've collected quite a few go-to recipes that I rotate between to make having a balanced breakfast quick and easy. Whether you're craving savory, sweet, or a little bit of both, having little time for breakfast doesn't have to mean sacrificing nutrition goals or flavor.

Quite literally at the top of my list is these breakfast cookies by Ambitious Kitchen. So much so that I've sent this recipe to many of my clients! Packed with nutrients, this high fiber recipe is easy to make and delicious.

Have a couple for breakfast, or pair one with eggs, yogurt, or cottage cheese to complete your meal. And if you're not a big baker, know that this is a very forgiving recipe!

While I don't love a lot of the products that have come from the recent protein craze, this is a product I can get behind. What I love about this mix in particular is that it is made with whole grains, giving you 4g of fiber per serving.

My favorite ways to prepare it are by making a batch of waffles to reheat throughout the week, or making a mug cake fresh in the morning. The added protein in the mix simplifies breakfast without sacrificing taste or texture. Pair with some berries and you've got breakfast!

This recipe requires a little more effort up front, but it's worth it for a flavorful egg bake that you can simply reheat in the morning. There's also endless ways to make it your own with different mix-ins.

I know chia pudding isn't always the most exciting recipe but hear me out...this one is blended. Blending the chia pudding gives it a much better texture that pairs well with yogurt, fruit and granola.

This one does require a bit more work but it is my favorite way to eat eggs! Truth be told, I often have this for lunch. Either way, it's delicious and still on the simple side.

While the OG superhero muffin in the Run Fast. Eat Slow. cookbook can't be beat, this mix is a close second. The original recipe is certainly a labor of love, so these muffin mixes offer a simpler alternative that is still packed with nutrients and fiber.

I personally love pairing a muffin with a couple soft boiled eggs, but they'd also go great with a bowl of yogurt for added protein.

Of course there are endless ways to make a balanced, filling smoothie. If you're bored of your go-to, I recommend this recipe. It's simple yet unique from the use of almond extract for a blast of flavor.
