Spiced Beef and Couscous Bowls with Mint Yogurt Sauce

These bowls feel like the definition of an early spring meal. The warmth of the spiced meat paired with the brightness of the lemon-mint yogurt sauce and peas is the perfect combination of cozy and fresh!
This recipe also makes for delicious leftovers! Store the sauce and greens separate from the rest of the dish to optimize freshness.

Ingredients:
1 tbsp paprika
1/2 tsp cumin
1 tsp coriander
1 tsp cinnamon
1/2 tsp turmeric
1 tsp garlic powder
1 tsp salt
1 tsp ground black pepper
1/4 tsp smokey chili powder
1 lb ground beef
1/2 cup frozen peas
For the Couscous
1 cup pearl couscous
1 1/2 cups water or chicken broth
1 tbsp butter
For the Yogurt Sauce
1/2 cup 2% or full fat plan greek yogurt
10-15 mint leaves, finely chopped
2-4 tbsp olive oil (to consistency preference)
1/4 tsp salt
zest of 1 lemon
juice of 1/2 a lemon
1 tsp toasted sesame seeds
For the Toppings
feta
microgreens or spinach
Recipe:
Prepare the sauce in a small bowl combine yogurt, mint, olive oil, salt, lemon zest, lemon juice, and sesame seeds. Stir until combined and set aside in the fridge.
Prepare the couscous as described on the package, or by bringing water/chicken broth to a boil, adding the couscous, and cooking for 8-10 minutes until tender. Once couscous is cooked, stir in 1 tbsp butter.
Prepare the spices in a medium size mixing bowl, combine all of the spices.
Combine spice mixture with ground beef until evenly incorporated.
Cook the meat. Add one tbsp of vegetable oil or avocado oil to a large skillet and place over medium heat on the stove.
Once the pan is hot, add meat and cook all the way through (until there is no more pink), stirring occasionally. About 5-6 minutes.
Add frozen peas, stir to combine and turn off the heat.
Serve and enjoy! Garnish the beef, peas, and couscous with feta and your choice of greens. Makes 4-5 servings.
